What You Need
  • 3 cups fresh cranberries
  • 1/4 cup green onions, minced
  • 2 small jalapeno chili peppers, cored, seeded, minced
  • 1/2 cup granulated white sugar
  • 2 tablespoons fresh ginger, finely grated
  • 1/4 cup fresh cilantro leaves, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 8 ounce packages cream cheese
  • Cranberries and cilantro sprigs for garnish
How to Make It
Thoroughly rinse and drain the cranberries discarding any that are soft or bruised.
Use a food processor to process the cranberries on the pulse setting until they are crushed and chopped but not too soft and mushy.
Transfer the crushed cranberries to a bowl and add the minced green onions, the jalapeno peppers, sugar, grated ginger, cilantro leaves, and fresh lemon juice and mix all of the ingredients together.
Cover the mixture with plastic wrap completely and refrigerate for at least 4 hours.
After the salsa has chilled, put the cream cheese on a serving platter and cover with the cool salsa.

  • 1 package flaky pastry dough sheets

  • 3 tablespoons heavy whipping cream

How to Make It

Preheat the oven to 375 degrees Fahrenheit.

Line a miniature muffin tin with small baking cup and place a square of dough inside. Shape the edges of the dough up the sides of the baking cups to keep the ingredients from spilling over.

    I found this dip when I was on a low carb diet and was looking for a party appetizer that would work well with vegetables. Something with a robust flavor that would perk up the veggies.

    Well this one definitely fit the bill. This appetizer has become a favorite among my friends. It's served multiple times throughout the year at various parties that I either host or attend.

    You can make it as smokey and spicy as you want by adjusting the amount of chipotle peppers (smoked jalepenos) but watch out. You can easily go from mildly spicy to blow-your-face-off hot by adding too much!

    Steps to Make Cheddar Chipotle Dip

    Preheat oven to 350 degrees.

    Stir together cheeses, mayonnaise, corn, green chili peppers, chipotle chili peppers and garlic powder in a large mixing bowl. Spread mixture into a 1 quart, covered dish.

    Bake for 30 minutes until bubbly. Top with tomato, green onion and cilantro. I like to make a pattern out of the toppings so I put the tomatoes all in the middle, make a ring around them with the green onion then sprinkle the cilantro over all.

    Serve with vegetables, like red, green and yellow peppers. Tostido and Frito Scoops work well too.

    Number Two Most Requested Hot Appetizer--Boneless Buffalo Wings
    • 1 large bag of popcorn chicken, thawed (I buy mine at Sam's Club)
    • 1 package dry Good Seasons italian dressing mix
    • 1 bottle Frank's Red Hot Sauce (or to taste)
    • 1 stick margarine (butter will separate)
    • 2 teaspoons lemon juice
    • Pinch dried basil
    In a saucepan, combine dressing mix, hot sauce, margarine, lemon juice and basil and cook until margarine melts, stirring constantly.

    Place chicken in a large bowl and pour sauce over it. Stir until well combined, then pour all into a Crock Pot. Cook on low 4 hours. Crack the lid to keep down the steam and prevent wings from getting soggy.
    Serve with celery sticks and blue cheese dressing (do not use the reduced fat variety).

    Number Three Most Requested Hot Appetizer--Warm Green Chili Dip
    • 8 oz. shredded mozzarella cheese
    • 8 oz. shredded mild cheddar cheese
    • 2 cups mayonnaise
    • 1 small sweet onion, minced
    • 1 can (4 oz.) chopped green chilis, drained
    • 1-1/2 oz. chopped pepperoni
    • 1/2 cup sliced ripe olives
    • Tostidos or Fritos Scoops
    In a shallow baking dish, combine the first five ingredients. Top mixture with the pepperoni and olives.
    Bake at 325 degrees about 25 minutes or until bubbly. Serve with Scoops, crackers or assorted fresh vegetables.

    Note: I do not recommend using reduced fat mayonnaise.

    Speaking from personal experience, these three hot appetizers are guaranteed to be a hit at any get together.

    Number One Most Requested Delicious Dessert--Raspberry White Chocolate Dream Bars
    • 1 box white cake mix
    • 1/3 cup evaporated milk
    • 1-1/2 sticks melted butter
    • 1 cup chopped nuts
    • 1/2 cup seedless raspberry jam
    • 12 oz. white chocolate chips
    Combine cake mix, milk, butter and nuts. Makes a very gooey dough. Spray a 9 x 13 pan and spread half of the dough into the bottom of the pan. Bake for 10 minutes at 350 degrees.

    Melt the jam in the microwave (about a minute) and spread on top of hot crust. Immediately sprinkle chocolate chips over jam. Crumble remaining dough on top and bake an additional 20-25 minutes. Cool completely before cutting.

    Panini, an exemplary grilled sandwich, is found in the menus of restaurants, cafes, and bistros. Panini is an Italian plural word which translates to "small breads." The singular term is "panino." By tradition, Panini sandwiches are made of small breads. In English-speaking places, Panini is an Italian grilled sandwich.

    Procedure:

    The steps in making a Panini sandwich are so simple. First, start with the bread. Lay down two pieces of bread. Then, brush lightly with olive oil (preferably extra virgin) one side of each bread. This would result to a crispier texture. Then, put on top of bread the fillings for the sandwich. Anything can be added. Good quality meats and the remaining of the feelings between two yummy layers of cheese is the usual arrangement.

    Lastly, toast the sandwich. It is preferable to have a Panini grill when making the sandwiches. A Panini grill is an appliance that looks like a waffle iron.     For the meatballs:

    How to Make It

    Mix your ground beef with the egg yolks, sugar, currants, and spices. Form into small balls measuring about an inch in diameter.

    Boil broth and wine. Add the meatballs and boil until done; approximately 15 minutes. Remove the meatballs from the broth and set them in a serving dish.

    Using a separate pan, mix the almond milk, rice flour, sugar, and mace. Bring the mixture to a boil and reduce the heat. Let it simmer over medium until it thickens. Pour sauce over the pumpes (meatballs) until it just coats them. Serve hot.

    What You Need
    • 2 Tablespoons butter
    • 8 cups sliced onions (4 large onions)
    • 1 Tablespoon fresh thyme, minced

    How You Make It

Add the thyme and reduce the heat to low. Stir frequently, for about 25 minutes. Add garlic and let it saute a couple of minutes. Add 1/4 cup of the wine, stirring until it almost evaporates. Sprinkle onions with sugar and continue cooking for around ten more minutes. Add the remaining wine, again stirring until it almost completely evaporates. Season to taste with salt and pepper. Let the onions cool. (This portion of the recipe can be made up to two days ahead of time and kept in the refrigerator.)

    Preheat your oven to 350 degrees Fahrenheit. Unwrap your Brie. Carefully cut away the top of the rind, leaving the rest intact. Place the Brie on a baking sheet covered with parchment. Spoon onion mixture on top of the Brie. Bake until the cheese begins to melt; about half an hour.

    Remove Brie from the oven. Lift it by the parchment paper and transfer it to a platter. The paper can be trimmed once the cheese has been moved. Surround it with slices of baguette and serve warm.

    This recipe serves six people and it combines chilled seafood with a warm honey and orange dressing. You can use white wine vinegar instead of champagne vinegar if you prefer.     Roast Top Round With Sweet Potatoes and Shallots

    2 teaspoons flavored oil or good-quality olive oil
    One 2 to 3 pound beef top round
    1 tablespoon chopped fresh sage
    3 cloves garlic, peeled and thinly sliced
    4 medium-sized shallots, peeled and thinly sliced
    Freshly ground black pepper
    2 large sweet potatoes, scrubbed and cut crosswise into 2-inch thick slices
    Salt
    ½ to ¾ cup dry red or white wine
    Preheat the oven to 350 degrees.

    Use 1 teaspoon of the oil to grease the bottom of a large roasting pan. Place the beef in the pan and rub the remaining oil all over it. Sprinkle the top of the beef with half of the thyme, sage, garlic, and shallots. Season with a generous grinding of pepper. Surround the beef with the potato slices; sprinkle the remaining herbs, garlic, and shallots on the sweet potatoes, and season with salt and pepper. Pour ½ cup of the wine around (not on top of) the beef.

    Roast the beef and sweet potatoes, basting every 20 minutes or so and adding the remaining ¼ cup of wine if necessary, until the internal temperature reaches 125 degrees for rare beef, 45 minutes to 1 hour. Remove the roasting pan from the oven and let the beef and sweet potatoes sit in the pan, loosely covered with aluminum foil, for 10 to 15 minutes before slicing.

    Transfer the beef to a carving board and the sweet potatoes to a warm bowl. Cut the meat into thin slices. Remove any excess fat from the pan and pour the pan juices and bits of garlic and shallots on top of the beef. Pass the sweet potatoes separately, makes 4 to 6 servings.
