What You Need
  • 3 cups fresh cranberries
  • 1/4 cup green onions, minced
  • 2 small jalapeno chili peppers, cored, seeded, minced
  • 1/2 cup granulated white sugar
  • 2 tablespoons fresh ginger, finely grated
  • 1/4 cup fresh cilantro leaves, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 8 ounce packages cream cheese
  • Cranberries and cilantro sprigs for garnish
How to Make It
Thoroughly rinse and drain the cranberries discarding any that are soft or bruised.
Use a food processor to process the cranberries on the pulse setting until they are crushed and chopped but not too soft and mushy.
Transfer the crushed cranberries to a bowl and add the minced green onions, the jalapeno peppers, sugar, grated ginger, cilantro leaves, and fresh lemon juice and mix all of the ingredients together.
Cover the mixture with plastic wrap completely and refrigerate for at least 4 hours.
After the salsa has chilled, put the cream cheese on a serving platter and cover with the cool salsa.

Medieval Appetizer Recipes

For the well-to-do, medieval meals were made of several courses. Displaying extravagance was very important to show others how well off you were. The main course was usually a very elaborate dish. Quick appetizers were often served between courses or at the end of a meal.

What You Need
For the meatballs:
  • 1 pound ground beef
  • 2 egg yolks
  • 1/4 cup currants
  • 1 Tablespoon sugar

  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
Pinch saffron
  • 4 cups beef broth
  • 1/4 cup red wine
For the sauce:
  • 2 cups almond milk
  • 1 Tablespoon rice flour
  • 3 Tablespoons sugar
  • 1/8 teaspoon mace
  • 1/8 teaspoon cinnamon
How to Make It

Mix your ground beef with the egg yolks, sugar, currants, and spices. Form into small balls measuring about an inch in diameter.

Boil broth and wine. Add the meatballs and boil until done; approximately 15 minutes. Remove the meatballs from the broth and set them in a serving dish.

Using a separate pan, mix the almond milk, rice flour, sugar, and mace. Bring the mixture to a boil and reduce the heat. Let it simmer over medium until it thickens. Pour sauce over the pumpes (meatballs) until it just coats them. Serve hot.

What You Need
  • 2 Tablespoons butter
  • 8 cups sliced onions (4 large onions)
  • 1 Tablespoon fresh thyme, minced
  • 4 garlic cloves, chopped
  • 1/2 cup dry white wine
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 8-inch French Brie
  • 2 French baguettes, sliced
How You Make It
 Place butter in a large cast iron skillet over medium heat. Add onions and saute until they are tender; about 6 or 7 minutes. Keep stirring them so they do not burn. Add the thyme and reduce the heat to low. Stir frequently, for about 25 minutes. Add garlic and let it saute a couple of minutes. Add 1/4 cup of the wine, stirring until it almost evaporates. Sprinkle onions with sugar and continue cooking for around ten more minutes. Add the remaining wine, again stirring until it almost completely evaporates. Season to taste with salt and pepper. Let the onions cool. (This portion of the recipe can be made up to two days ahead of time and kept in the refrigerator.)

Preheat your oven to 350 degrees Fahrenheit. Unwrap your Brie. Carefully cut away the top of the rind, leaving the rest intact. Place the Brie on a baking sheet covered with parchment. Spoon onion mixture on top of the Brie. Bake until the cheese begins to melt; about half an hour.

Remove Brie from the oven. Lift it by the parchment paper and transfer it to a platter. The paper can be trimmed once the cheese has been moved. Surround it with slices of baguette and serve warm.

Roast Top Round With Sweet Potatoes and Shallots

2 teaspoons flavored oil or good-quality olive oil
One 2 to 3 pound beef top round
1 tablespoon chopped fresh sage
3 cloves garlic, peeled and thinly sliced
4 medium-sized shallots, peeled and thinly sliced
Freshly ground black pepper
2 large sweet potatoes, scrubbed and cut crosswise into 2-inch thick slices
Salt
½ to ¾ cup dry red or white wine
Preheat the oven to 350 degrees.

Use 1 teaspoon of the oil to grease the bottom of a large roasting pan. Place the beef in the pan and rub the remaining oil all over it. Sprinkle the top of the beef with half of the thyme, sage, garlic, and shallots. Season with a generous grinding of pepper. Surround the beef with the potato slices; sprinkle the remaining herbs, garlic, and shallots on the sweet potatoes, and season with salt and pepper. Pour ½ cup of the wine around (not on top of) the beef.

Roast the beef and sweet potatoes, basting every 20 minutes or so and adding the remaining ¼ cup of wine if necessary, until the internal temperature reaches 125 degrees for rare beef, 45 minutes to 1 hour. Remove the roasting pan from the oven and let the beef and sweet potatoes sit in the pan, loosely covered with aluminum foil, for 10 to 15 minutes before slicing.

Transfer the beef to a carving board and the sweet potatoes to a warm bowl. Cut the meat into thin slices. Remove any excess fat from the pan and pour the pan juices and bits of garlic and shallots on top of the beef. Pass the sweet potatoes separately, makes 4 to 6 servings.
